After introducing our refreshing garden spearmint collection last week, I thought I would be back today and show you how I use spearmint essential oil, not only in our sheep milk soaps and body care products, but also in baked goods. This decadent gluten-free spearmint chocolate mug cake is a favorite of mine and one that you can whip up from start to finish in minutes. We have a huge patch of spearmint on our land and I can’t wait to potter in the garden and harvest some mint every morning but in the meantime, I will enjoy this spearmint chocolate mug cake and I hope you will too:)
DECADENT GLUTEN-FREE SPEARMINT CHOCOLATE MUG CAKE
ACTIVE TIME: 5 MINUTES | YIELD: 1 SERVING
INGREDIENTS:
4 tablespoons gluten-free flour
2 tablespoons unsweetened cacao
1/2 teaspoon baking soda
2 tablespoons melted coconut oil
4 tablespoons maple syrup
2 tablespoons almond milk
1 beaten egg
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1/8 teaspoon sea salt
1 tablespoon semisweet chocolate chips
spearmint essential oil
mint leaves
INSTRUCTIONS:
Mix all the ingredients in a bowl until batter is smooth.
Dip a toothpick in spearmint essential oil and stir the batter with the toothpick.
Grease mug with coconut oil.
Pour batter into mug.
Microwave on high for 90 seconds.
Let it cool for a few minutes.
Serve with whipped cream or vanilla ice cream.
Garnish with mint leaves. Enjoy!
